People remember the two-plane scheme from the first Fatal Fury. Two different planes are used for battle. It's easy to avoid strikes by stepping between the planes. As time went on, the games got more complicated, getting rid of the two-plane system and adding a three-plane system and easy half-second dodges into the background.
Characters can fight characters on both planes at the same time, across both planes or in some other way. From later games like Garou: Mark of the Wolves onward, the plane method was never used again.
Later Fatal Fury games have tried out different changes to the way the game works. "Ring-outs" happen when a character is thrown over the edge of the battle backdrop. On single-plane backdrops, dodges aren't possible at all, so moves that send competitors to the opposite plane do extra damage.
Several characters can use the "Deadly Rave" super combo. After executing it, a player had to press a set of buttons at the exact right time for the whole combo to go off. "Just Defend" is a type of protected block that gives players back life, doesn't drain their guard crush meter, and gets rid of all block stuns, which makes it easier to break combos.
